November 4th, 2009a healthy apple-carrot salad

My little Caity loves eating apple, in fact she loves to eat most fruits. We’re happy with that because I know many parents are having problems with their kids being picky eaters. Apples actually have health-rich properties that we can benefit from. Lately she’s has become a little rabbit, munching on carrots too.

 

There’s a simple and quick healthy recipe I learned from my mother-in-law combining both apples and carrots that’s really delicious. Caity first tasted it (and liked it) when she was still a year old and since then I haven’t been able to make this salad again.

So this morning after she finished eating an apple, I made this health-rich treat for her. Here’s how to make it:

Combine 1 piece of grated apple and 1 piece of grated carrot in a bowl. Squeeze a little lemon over it, add half a teaspoon of sugar and that’s it. It’s best eaten when chilled. November 1st, 2009she’s active, i’m inactive

This is little Caity, my active toddler:

With my baby bump getting bigger, I’m having a hard time catching up with her alertness.  This little girl is fond of dancing and she likes everybody to dance with her.  She’d pull us to join her when there’s an upbeat music playing.  Poor mama is usually lazy to stand up and dance. hehehe…

Like yesterday when we were at her grandma’s place, M played a kiddie music video on the TV which she happily sang and danced along.  She was calling to me to dance with her but I didn’t move at all.  She pulled her baba (grandma) instead.  =)  Fortunately her baba was a willing dance partner.  Too bad my digicam died while I was recording them! waaaa!

Whew! When baby H. is out, I’ll have two active kids to handle.  I’ll just look at the bright side and think of it as a good fat burner- playing with them and running after them! Such fun! hahaha
